The article discusses the dynamics of the processing of jucara fruits (Euterpe oleracea Mart.) in Morros, Maranhao, from the traditional use of urupema to the incorporation of the processing machine. Using historical analysis, participant observation, and interviews with vendors who have been in the business for more than 20 years, the research revealed that this activity has increased the income of local families and improved their quality of life. In addition, the sustainable exploitation of the fruit has helped to preserve the palm groves of jucara and the biodiversity of the region. The cultivation and use of the fruit has had positive impacts, benefiting both the local economy and the environment.
